Description
Mais con Yelo is a refreshing Filipino dessert that combines layers of sweet corn kernels, creamy creamed corn, shaved ice, and evaporated milk, often topped with condensed milk, vanilla ice cream, and crunchy cornflakes. It's perfect for a quick, cool treat on a warm day, with a delightful balance of creamy sweetness and icy texture.
Ingredients
Corn Base
- 1 12-oz can canned corn (whole kernel or peaches and cream)
- 1 13-oz can creamed corn
Dairy and Sweeteners
- Condensed milk (to taste, about 1-2 teaspoons per serving)
- Evaporated milk (to taste, approximately 2-4 tablespoons per serving)
Others
- Ice (shaved or crushed, enough to fill the glass)
- Cornflakes (optional, for topping)
- Vanilla ice cream (optional, for topping)
Instructions
- Layer Corn and Condensed Milk: In a serving glass or container, start by adding about 2 tablespoons of whole corn kernels followed by 2 tablespoons of creamed corn. Drizzle 1 to 2 teaspoons of condensed milk over the corn to add sweetness. Adjust the condensed milk to taste depending on your preference.
- Add Ice: Fill the glass with shaved or crushed ice. Make sure the ice is packed enough to support the layers but not overly compacted so that the dessert stays light and refreshing.
- Pour Evaporated Milk: Slowly pour evaporated milk over the ice to moisten it. Use about 2 to 4 tablespoons depending on the size of the glass and your desired creaminess. The ice should be wet but not soggy, maintaining some texture.
- Optional Toppings: For extra richness and crunch, top the dessert with a scoop of vanilla ice cream and a handful of cornflakes. This adds a delightful contrast in texture and flavor.
- Mix and Serve: Before eating, mix all the layers gently to combine the creamy, sweet corn with the icy milk mixture, creating a deliciously chilled treat.
Notes
- You can adjust the sweetness by adding more or less condensed milk according to your taste.
- Using shaved ice instead of crushed ice provides a smoother texture and better layering.
- Cornflakes add a nice crunchy texture, but you can omit them if you prefer a softer dessert.
- This dessert is best served immediately to enjoy the fresh icy texture before the ice melts.
