- ¼ cup dill, plus a few extra leaves for finishing
Salad
- 4 cups romaine lettuce, chopped
- 2 cups cooked rotisserie chicken breast, pulled into bite-size chunks
- ½ cup cucumber, sliced into coins
- ¼ cup watermelon radish, thinly sliced
- Black pepper, freshly cracked, to taste
Instructions
- Prepare the dressing: In the bowl of a food processor, combine the grated and sliced Parmigiano Reggiano, fresh lemon juice, garlic clove, Dijon mustard, and anchovy fillets. Process for 15 to 20 seconds until blended and smooth.
- Add remaining dressing ingredients: Add the extra virgin olive oil, fat-free Greek yogurt, parsley, dill, and basil to the food processor. Run the machine for another 15 to 30 seconds until the herbs are finely chopped and the dressing is creamy. Reserve the dressing.
- Assemble the salad: Place the chopped romaine lettuce as the base in serving bowls or plates. Top with the pulled rotisserie chicken pieces, cucumber slices, and thinly sliced watermelon radish.
- Dress and garnish: Drizzle the prepared green goddess Caesar dressing over the salad. Finish by topping with extra herb leaves, additional slices of Parmigiano Reggiano, and freshly cracked black pepper to taste.
