Ingredients
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
Wet Ingredients
- 1 1/2 cups Greek yogurt or cottage cheese
Toppings
- 1/2 to 3/4 cups pizza sauce
- 1 cup shredded mozzarella cheese (more to taste)
- Mini pepperoni (optional)
- Cooked crumbled sausage (optional)
- Diced veggies (optional)
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin generously with oil or line with parchment liners; a silicone muffin pan is recommended for easy removal.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, garlic powder, Italian seasoning, and salt until well combined.
- Add Yogurt or Cottage Cheese and Form Dough: Add Greek yogurt or cottage cheese to the dry ingredients. Mix initially with a spoon, then use clean hands to knead the mixture into a dough ball. If the dough feels too sticky, gradually add 1-2 tablespoons of flour until it is manageable.
- Divide Dough: Divide the dough evenly into 12 pieces, roughly the size of a golf ball each.
- Shape Dough in Muffin Cups: Press each dough ball into the prepared muffin tin, flattening the base and pushing the dough slightly up the sides to create a cup shape that will hold toppings.
- Add Sauce and Toppings: Spoon about 1 tablespoon of pizza sauce into each dough cup. Top with 1-2 tablespoons of shredded mozzarella cheese and add optional toppings like mini pepperoni, cooked sausage, or diced vegetables as desired.
- Bake: Place the muffin tin into the oven and bake for 18-22 minutes, or until the dough is golden brown and cheese has melted and is bubbly.
- Cool and Serve: Allow the pizza cups to cool for at least 5 minutes before removing from the tin and serving.
Notes
- Use Greek yogurt for a tangier flavor or cottage cheese for a creamier texture in the dough.
- Add toppings of your choice such as olives, mushrooms, bell peppers, or cooked bacon bits.
- These pizza cups can be reheated in the oven or microwave for a quick snack.
- If dough is sticky, flour your hands lightly when shaping.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend, but baking time may vary.
