Ingredients
For the Chicken Marinade
- 1/3 Cup Greek yogurt (plain full-fat)
- 3 Cloves garlic (grated)
- 1 Tablespoon olive oil
- 2 Teaspoons honey
- 1 ½ Teaspoons Aleppo pepper flakes (dried)
- 1 Teaspoon ground paprika
- ¾ Teaspoon salt
- ¼ Teaspoon black pepper (freshly ground)
- ½ Lemon (juice only)
- 1 ½ Pounds chicken thighs (boneless, skinless, cut into chunks)
For the Minted Yogurt Sauce
- 2/3 Cup Greek yogurt (plain full-fat)
- 3 Tablespoons olive oil
- ½ Lemon (juice only)
- ¼ Teaspoon salt
- 1 Tablespoon fresh mint leaves (minced)
Instructions
- Marinate the Chicken: In a large bowl, combine ⅓ cup Greek yogurt, grated garlic, 1 tablespoon olive oil, honey, Aleppo pepper flakes, paprika, ¾ teaspoon salt, black pepper, and half the lemon juice. Mix well to create the marinade.
- Coat the Chicken: Add the chicken thigh chunks into the marinade and toss thoroughly to coat every piece evenly.
- Let it Marinate: Cover the bowl and let the chicken marinate for 15 minutes, allowing the flavors to penetrate the meat.
- Prepare the Yogurt Sauce: In a separate small bowl, mix the remaining ⅔ cup Greek yogurt, 3 tablespoons olive oil, the remaining lemon juice, ¼ teaspoon salt, and minced fresh mint. Stir well and set aside to develop flavors.
- Heat the Skillet: Preheat a large skillet over medium-high heat to get it hot enough for searing.
- Add Oil: Pour 1 tablespoon olive oil into the hot skillet and swirl to evenly coat the surface.
- Brown the Chicken: Arrange the marinated chicken pieces in a single layer in the skillet. Cook undisturbed for 3 to 4 minutes until they are deeply browned and release easily from the pan.
- Flip the Chicken: Turn the chicken pieces over and cook for another 3 to 4 minutes on the second side to brown evenly.
- Finish Cooking: Stir the chicken frequently and continue cooking for an additional 2 to 3 minutes until the chicken is fully cooked through and evenly browned all over.
- Serve: Transfer the cooked chicken bites to a serving plate and serve hot accompanied by the minted yogurt sauce for dipping or drizzling.
