Description

Marry Me Chicken Wraps are a delicious, quick-to-make meal featuring tender chicken breast combined with sundried tomatoes, creamy cheeses, and fresh spinach, all wrapped in a soft tortilla. Perfect for a satisfying lunch or dinner, these wraps come to life when air-fried or pan-toasted to achieve a golden, crispy exterior.


Ingredients

Chicken

  • 450 g chicken breast (1 lb)

Cheese Mixture

  • 120 g cream cheese or smooth cottage cheese (½ cup)
  • 120 g mozzarella or cheddar, grated (1 cup)
  • 40 g parmesan, grated (⅓ cup)

Other Ingredients

  • 100 g sundried tomatoes, finely chopped (½ cup)
  • 50 g tomato paste (3 tbsp)
  • 50 g spinach, chopped (2 cups loosely packed)
  • 4 wraps (tortillas)


Instructions

  1. Cook the Chicken: Season the chicken breast with salt and pepper or your preferred spices. Cook it over medium heat in a skillet or pan until it is tender and fully cooked through, about 8-10 minutes depending on thickness. Remove from heat and let it cool slightly.
  2. Prepare the Filling: Cut or shred the cooked chicken into bite-sized pieces. In a mixing bowl, combine the chicken with finely chopped sundried tomatoes, cream cheese or smooth cottage cheese, grated mozzarella or cheddar, grated parmesan, tomato paste, and chopped spinach. Mix everything thoroughly until well combined.
  3. Assemble the Wraps: Lay each wrap flat on a clean surface. Evenly distribute the chicken and cheese mixture among the wraps, placing it in the center. Roll or fold each wrap tightly to enclose the filling. If storing for later, wrap each one individually with foil or cling wrap.
  4. Cook the Wraps: To serve, either air fry the wraps at 180°C (350°F) for about 5-7 minutes until they are golden and crispy, or pan-toast them over medium heat on a skillet for 3-4 minutes per side, pressing gently to seal and crisp up the exterior.

Notes

  • You can substitute the chicken breast with cooked turkey or leftover rotisserie chicken.
  • For a spicier kick, add a pinch of chili flakes or a drizzle of hot sauce to the filling.
  • Spinach can be substituted with kale or arugula if preferred.
