Crust

Filling

- 4 large eggs

Instructions
- Preheat and prepare crust: Preheat your oven to 350°F (175°C). In a bowl, combine the butter, 1 1/2 cups almond flour, 1/4 cup erythritol, vanilla extract (if using), and a pinch of salt. Mix until a dough forms, then press the mixture evenly into a 9x9-inch baking dish lined with parchment paper. Bake for 15 minutes or until the crust starts to turn golden around the edges.
- Mix the filling: While the crust bakes, in a large bowl, whisk together 1 cup almond flour, 1 cup erythritol, eggs, fresh lemon juice, and lemon zest until the mixture is smooth and free of lumps.
- Bake the lemon bars: Pour the lemon filling evenly over the pre-baked crust. Return the baking dish to the oven and bake for an additional 25 minutes, until the filling is set and slightly firm to the touch.
