Ingredients
Soup Base
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 pound lean ground beef
- 3 garlic cloves, minced
- 2 tablespoons taco seasoning
- 1 teaspoon chili powder
- 1 teaspoon salt
Beans and Vegetables
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can no salt added tomato sauce
- 1 cup frozen corn kernels
- 1 (4-ounce) can mild diced green chiles
- 4 cups low-sodium vegetable broth
Finishing Ingredient
- Juice of 1 lime
Instructions
- Heat the olive oil and soften onion: In a large pot over medium heat, warm 1 tablespoon olive oil. Add the diced onion and cook for 5 minutes until softened and translucent, stirring occasionally to prevent burning.
- Brown the ground beef and add seasonings: Add 1 pound of lean ground beef to the pot. Cook for 5 to 7 minutes, breaking the meat apart with a spoon until fully browned. Stir in 3 minced garlic cloves, 2 tablespoons taco seasoning, 1 teaspoon chili powder, and 1 teaspoon salt. Cook for an additional minute until the spices become fragrant.
- Add beans, vegetables, and broth: Stir in the black beans, kidney beans, tomato sauce, frozen corn kernels, diced green chiles, and 4 cups of low-sodium vegetable broth. Bring the mixture to a boil over high heat.
- Simmer the soup: Reduce the heat to low and let the soup simmer uncovered for 20 minutes. The broth will thicken slightly as it cooks. Stir occasionally to prevent sticking.
- Finish with lime juice and serve: Remove the pot from heat and stir in the juice of 1 lime for a bright, fresh flavor. Ladle the soup into bowls and add your favorite toppings such as shredded cheese, sour cream, or fresh cilantro if desired.
Notes
- For a spicier version, use hot diced green chiles or add a pinch of cayenne pepper.
- Toppings like avocado, shredded cheese, sour cream, or tortilla chips add extra flavor and texture.
- You can substitute ground turkey or chicken for a leaner protein option.
- Leftover soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
- If you prefer a thicker soup, mash some of the beans before adding them or let it simmer longer.
