Danish Pastry
- 1 batch homemade Danish pastry
Filling
- 125 g full-fat cream cheese, softened (4 oz)
- 1 tablespoon granulated white sugar
- 2 teaspoons milk
- Zest of half a small lemon
- ¼ cup good quality strawberry jam
- 12 small fresh strawberries
Topping
- 1 egg yolk mixed with a dash of water
- 1 teaspoon demerara (turbinado) sugar
Instructions
- DAY BEFORE: Make the Danish pastry. Prepare your homemade Danish pastry according to your preferred recipe and refrigerate overnight to allow it to rest.
- Preheat the oven. Set your oven to 200°C (395°F) or 180°C (fan forced). Line two baking trays with parchment paper to prevent sticking.
- Shape the Danishes. On a lightly floured surface, roll the dough out to approximately 30x40 cm (12x16 inches). Trim the edges and cut into 12 even squares about 10 cm (4 inches) each. For smaller pastries, cut into 20 pieces around 8 cm square (5 squares long by 4 wide).
- Arrange the dough on baking trays. Place six squares onto each tray. Put a small dot of water in the center of each square, then fold all four corners into the center, pressing slightly to make a dent. Let the shaped pastries rest for 10–15 minutes to relax the dough.
- Prepare the filling. Wash, dry, and chop the strawberries into small pieces. In a medium bowl, beat together the softened cream cheese, granulated sugar, milk, and lemon zest until smooth using either a spatula or an electric mixer.
- Fill the pastries. Spoon ½ to 1 teaspoon of strawberry jam into the center dent of each pastry square and gently press to spread slightly. Top the jam with 1 to 2 teaspoons of the cream cheese mixture, spreading the edges of the cream cheese out gently to cover the jam to prevent it from bubbling over during baking.
- Add fresh strawberries. Scatter the chopped fresh strawberry pieces on top of the cream cheese layer evenly.
- Apply egg wash and sugar. Brush the exposed dough edges with the egg yolk mixed with water. Sprinkle the edges with demerara sugar to add a sweet crunchy finish.
- Bake. Place the trays in the preheated oven and bake for 18–22 minutes, depending on the size of your pastries, until they are golden brown. Turn the trays halfway through baking (after about 10 minutes) for even color and cooking.
