Description

A quick and flavorful 30-minute pepper steak stir fry featuring tender flank steak and vibrant bell peppers cooked in a savory soy-ginger sauce, perfect for a nutritious weeknight meal.

Ingredients

For the Stir Fry

  • 1 tbsp oil (olive, avocado, or vegetable)
  • 1 large red bell pepper, cut into thin strips
  • 1 large green bell pepper, cut into thin strips
  • 2 lbs flank steak, cut into thin strips
  • 2 garlic cloves, pressed
  • 1 tbsp fresh ginger, grated

For the Sauce

  • 1/3 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp corn starch

Instructions

  1. Make Sauce: In a small bowl, whisk together the soy sauce, brown sugar, and corn starch until the mixture is smooth and set aside for later use.
  2. Cook Bell Peppers: Preheat a wok or large skillet over medium heat and add the oil. Add the sliced red and green bell peppers and sauté for about 3 minutes until they become golden brown and slightly tender. Remove the peppers from the pan and set aside.
  3. Cook Beef: Increase the heat to high and add the flank steak strips to the pan. Add the pressed garlic and grated ginger at this stage. Cook the beef, stirring occasionally, until it is browned on all sides and cooked through, ensuring a nice sear on the strips.
  4. Combine: Return the cooked bell peppers to the pan with the beef. Pour the prepared sauce over the steak and vegetables. Stir well to coat everything evenly and cook for an additional 2 to 4 minutes until the sauce thickens and the ingredients are heated through.
  5. Enjoy: Remove from heat and serve the pepper steak stir fry immediately alongside your favorite grain or noodles for a complete, satisfying meal.

Notes

  • For extra heat, add crushed red pepper flakes or fresh sliced chilies when cooking the beef.
  • Use low-sodium soy sauce if you want to reduce the dish's sodium content.
  • Flank steak can be substituted with sirloin or skirt steak for similar results.
  • Prep all ingredients before cooking to ensure smooth and quick stir-frying.
  • Serve with steamed rice, quinoa, or rice noodles for a balanced meal.
